As part of the Ajikataya (味方屋) series, this handcrafted blade carries the legacy of over a century of traditional Japanese blacksmithing.
Forged from high-performance Shirogami / White #2 steel (Shirogami #2) and finished with a rustic kurouchi (黒打ち) texture, the blade delivers a razor-sharp edge, superb edge retention, and effortless sharpening. The finely grained carbon steel ensures clean, precise cuts for delicate kitchen tasks.
Fitted with a traditional octagonal chestnut wood handle (八角柄), this knife offers a lightweight feel and a secure, comfortable grip—ideal for controlled, detail-oriented cutting. The compact 150mm size provides agility and maneuverability where it matters most.
