Steel hardness — measured on the Rockwell C scale (HRC) — is the primary performance differentiator between knife grades. Most entry-level knives sit between 52–54 HRC; a softer steel that rolls easily and resharpens quickly but won't hold an edge long. Mid-range professional knives typically achieve 56–58 HRC, and premium German and Japanese knives sit at 58–62 HRC — hard enough to hold a fine edge through significant use before needing sharpening. Edge geometry matters equally: a thinner grind angle (15° per side, common in Japanese knives) produces exceptional sharpness but requires more careful use and storage; a wider German-style bevel (20° per side) is more robust for general-purpose work. Full-tang construction, where the steel extends through the full length of the handle, provides the balance and control that defines a professional blade.
